The Day I Stopped Selling and Built a Business

The advertising agency I’d joined was the most competitive and ambitious in London. Building business was hardwired into every one of us. Competition with other internal teams as part of the process. Jumping to the top of the queue above other teams for the next new business prospect gave us more opportunities for winning new business. We were trained to present, to sell, and sell again and again. And I was desperate to succeed.

Failure could be challenging. Our creative teams could be fearsome to deal with. Emotions ran high — sometimes way too high, with unpleasant consequences. I planned to stay for a year or so. But twelve years passed quickly, and I ended up running a big group. The rewards for those of us who succeeded were good, but I wanted more.

I took a big, big risk and started a breakaway agency with seven colleagues. With a full team and a great office in the center of London, we had a stupidly large overhead from Day One. We also had no client and no income. We had to sell to survive. Every single opportunity, every new business prospect, however small, was critical. Our family houses, the school fees, the grocery bills, and everything we owned depended on winning business.

We were good — mostly, very good. Even if we lost a new business pitch, we didn’t give up. Sure, this irritated some prospects, but mostly they appreciated our hunger.

Every idea had to be sold and nurtured. Every opportunity, however small, is exploited. Our lives and our families depended on it. And at the end of the first year, we broke even. Our bankers were so amazed they threw us a private lunch to celebrate.

Then times got edgy. We had big debts. We restructured, redoubled our efforts, and focused harder on winning business. We survived — and produced some outstanding work.

After years and years of selling the agency to prospects, to staff, stakeholders, and selling work to clients, I realized something. I was dog-tired. I was exhausted from filling the leaky bucket of revenue over and over again. I knew it was time to merge my agency and get out. I stopped selling.

New Business. No Selling

After a stint at business school, I was back in business, but this time, on my own. I had no website and no nameplate in my office. I was invisible, and I didn’t sell. I just told past clients and colleagues what I was planning and doing.

For four months, the phone was quiet. Then it rang. I met with the prospect — and instead of selling and telling him about my offer, I just asked questions about his company and what problems required attention. I checked the size, importance, and cost of those problems.

He was interested in working with me, and I was interested in working with him. I wrote a two-paragraph summary of how to tackle the issues and added a price range. It was large and provided good value.

And the phone continued to ring, despite no website, no marketing, no sales activity, and no long submissions. I refused to write submissions – only one-page outlines. I just asked questions.

Really. No Selling.

A few years later I co-founded The Client Relationship Consultancy. Again: no website, no marketing, no selling. I met with past colleagues and explained our philosophy. We made them sign a two-way NDA — we would never talk about them, and they would never talk about us.

But they wanted to work with us. As clients moved to new agencies, the word spread and we got more calls. These new prospects wanted credentials presentations. I explained that I would tell them about our business for less than sixty seconds, and about our philosophy and approach for four minutes. At that point, if they did not agree with our approach, we could cut short the meeting and I might be able to suggest others who could be a better fit for them. But no one ever said that. And we still had a two-way NDA.

We never chased after a meeting. If I thought a prospect would not be right for us, I would decline their business. Occasionally, existing clients wanted to do things differently. If whatever they suggested failed to meet our philosophy, we refused to work with them.

I loved this new way of carrying out business. I felt re-energized. And our clients stuck.

To my business partners’ intense irritation, I refused to set annual targets. I did not want to feel that I needed to sell. But over sixteen years, our business grew and grew — to offices and consultants in London, Windsor, Boston, Mexico, Munich, Singapore, and Sydney. Still no website. Still no new business or marketing activity. Still a two-way NDA.

Why It Worked

Why did this approach work? Not having objectives for sales, and not selling, meant that I had a powerful position, equal to that of a prospective client. I could relax. As a result, so could the client. We were able to have adult-to-adult conversations. The prospective clients became less defensive, and more open to me. They were comfortable disclosing deeper, underlying issues.

Both parties had the opportunity to ensure that the ‘fit’ between was tight. Both sides had the chance to ensure that our beliefs were in synch. The result: long-term, enduring relationships, and no leaky buckets anywhere.

1. Get a mentor

The first thing to do as a new business owner is to find the right kind of mentor. That person could be someone in your industry or in general who you look up to. The guidance must be apt for your business, and it should be a mutual responsibility of sharing knowledge. 

2. Two big R’s – Routine and Refresh

Made a mess of something? Try to reboot the situation and make it work. Take a break once in a while and refresh yourself if you feel stuck or your ideas feel mundane. Plan a routine and stick to them – both personal and professional. Having a routine can increase productivity and engage in more activities apart from your pre-planned schedule. 

3. Inculcate problem-solving mentality

Do not panic once you are thrown a problem. Arrange a meeting with the respective party, listen to both sides of the stories, and make a decision that is more realistic and feasible. 

4. Hire half and half

Whenever you hire someone for your business. Make sure that half of the people contradict your ideas, and the other half have the same mindset as yours. The people who contradict can bring in more valuable points and their perspective might take the discussion to a whole new level.  Don’t take too much time finding the perfect one. Hire an apt person who can have the right attitude. 

5. Network, Network, and Network

Find like-minded people and mingle with them. Be more sportive in the learning process. Listen more and talk less – if you are a beginner. You can only be a constructive person who gives input to someone if you have listened to everyone’s point of view. If you feel down, your network might have something to uplift your mood and change your perspective on something.

6. Tech-savvy personnel

Learn a thing or two about the latest technology that you implement in your organization. Since the world revolves around technology, make sure your administrative authority knows as well.  

7. Don’t schedule a meeting, that could have been an email

Yes! I said it. Having unnecessary meetings will weaken the purpose of having a constructive discussion. Having back-to-back meetings drains the team members and yourself too. Always have a 10 to 15 minutes break between each meeting to feel refreshed and give your 100%. 

8. Have a pros and cons list

Always, I mean always have a pros and cons list. Let’s say one of your team members pitch an idea to improve the marketing strategies starting next month. Jot down the pros and cons before approving or rejecting it point-blank. It’s a systematic way of making a decision. 

9. Track your finances

Even if you have a team of accountants and auditors, make sure that you are present (both mentally and physically) – learn if you are not aware of it. Trusting your employees is a must, but not overseeing the records is a mistake that should be avoided.

10. Remember your “why?”

At some point in your hectic schedule or not having ME time can get to you. During those tough times – ask yourself – “Why am I doing this?”. If you can answer this question with a valid explanation, you’ll feel energized. Because “A purpose drives you”.

In February of 2020, I warned people that the thing everyone was calling Covid 19 or Coronavirus, was actually a biological weapon unleashed upon the earth by the CCP(Chinese Communist Party).

This weapon was released in a level 4 lab outside of Wuhan, China.

The reason for all of the confusion is because everyone was lying about what it was and where it came from.

President Xi Jin Ping of China was lying about it and so was President Donald Trump.

The bioweapon, known as Covid 19, was originally made in a laboratory by the U.S. Army at Fort Detrick, Maryland along with the help of North Carolina University, Anthony Fauci, and the CDC.

The work that was done on the Coronavirus, known as Covid 19, was eventually offshored to Wuhan, China circa 2014.

No one knows for sure exactly what was done as far as the modifications to Covid 19 once the research was moved to Wuhan.

We do know for an absolute certainty that something called “spike protein” was mixed in with the other ingredients, not only with the virus but more importantly, into the so-called Covid 19 vaccines.

Spike proteins are extremely toxic to the human body if they get into the bloodstream.

So, you have everyone including the media, lying about Covid and its origins, until the emails of Anthony Fauci get leaked out.

Once Fauci’s emails get exposed to the general public, his credibility about being an expert on Covid goes to zero.

People stop listening to him.

The Covid 19 grifters are at it again because they know no one is listening to them, this time around.

The Covid 19 grifters are losing control over the narrative and the majority of the U.S population.

More than half of Americans have not taken the experimental drug known as the Trump/Gates Warp Speed Covid 19 vaccine.

This has the Covid 19 grifters upset including Joe Biden who recently stated that getting the vaccine is the most patriotic thing that you can do.

This statement alone is an act of coercion.

In the 1947 Nuremberg Code, it clearly states that informed voluntary consent is essential when it comes to any type of medical experiment. (The Covid 19 vaccine is experimental and has not been approved by the FDA. Furthermore, the average time for a vaccine to be tested safely is 7 years.) The code goes on to state: the person involved with such experiments should have legal capacity to give consent as to be able to exercise free will, without the intervention of any element of force, fraud, deceit, duress, overreaching, or coercion. The person involved in such an experiment should have sufficient knowledge and comprehension of the elements of the subject matter involved as to enable them to make an understanding and enlightended decision.

Now that the economy has opened up and people are getting back to normal, only 47% of Americans have received at least one shot of the so-called vaccines.

The bioweapon known as Covid 19 was created for the vaccines, not the other way around.

This is what people are missing.

If you dig deep enough, you will find that this global vaccination plan is a de-population plan for humanity.

Let that sink in.

Since the emails from Anthony Fauci were released, the world now knows that there was an attack by the CCP in Beijing using biological weapons.

There are no vaccines for biological weapons like I have been saying since February 2020. Therefore, the experimental drugs that they keep referring to as a vaccine, must be something else.

This is where the spike proteins come in.

Since we now know there are spike proteins in all of the vaccines, and we know that spike proteins can be toxic to the human body, why are the vaccinations continuing, and why are the Covid 19 grifters trying to coerce the un-vaxxed into taking the vaccines?

On June 2nd, 2021, Dr. Byram W. Bridle from the University of Guelph in Canada, did a 5-minute radio interview that went viral.

Dr. Bridle is a viral immunologist who works with vaccines, and according to a request by him to the Japanese government, Bridle found out that the spike protein that is in the vaccines are not staying in the shoulder area, but getting into the bloodstream, whereby it can be toxic and cause all kinds of cardiovascular diseases including blood clots in humans.

Since the vaccine rates are not where the Covid 19 grifters want them to be, and since there are so many reports of people being injured or dying from the vaccines, the Covid 19 grifters needed a new plan not only to get more people vaccinated but also to cover up the existing vaccine deaths.

They came up with something called the “Delta Variant”.

Yes, they wanted to make it sound scary just like they did with Covid 19 in early 2020.

Like Covid 19, they first reported about the Delta variant from another country. This time, India.

There were all kinds of news reports about so many people dying, just like you heard about with Covid 19 in China, a year earlier.

This time, however, the American people are wise to the tricks of the Covid 19 grifters.

The Covid 19 grifters and their friends in the media are once again using their favorite weapon for mass social control: fear.

They are not telling you, however, that this so-called Delta variant is coming from the vaccines themselves.

The Delta variant = The Vaccine variant.

Instead, they are trying to convince the population that this Delta variant is being transmitted by the un-vaxxed without any hard evidence to support their claim.

This is another form of coercion being used to get people to take an experimental drug, which according to the 1947 Nuremberg Code listed above, is a war crime.

Most recently, and perhaps the most startling announcement, which I, by the way, have told people back in March 2020, there will be government people showing up at your front door.

Then, on July 6th, you hear not only the President, but his chief of staff, talk about going door to door with visits regarding the vaccine which would include people from FEMA. This not only sounds like coercion, but it seems to me that it goes further into intimidation.

Fortunately, for Americans, we have the U.S. Constitution and the 2nd Amendment.

If anyone is illegally trespassing on your private property, you can and must use force to discourage lawbreakers.

This is how desperate the Covid 19 grifters have become since more than half of America refuse to get the Covid 19 experimental death jab.

They are in a hurry to reduce the world’s population by 2/3 and they want to do it before more information leaks out about the number of deaths and disabilities from these experimental drugs.

 

There is no secret to good health.

All you have to do is keep your carb intake low, supplement with Vitamin D3, Liposomal Vitamin C, and use CHAGA mushrooms daily. Along with that, you must do high-intensity weight training & cardio 4 days per week.

Federal Covid-19 relief programs may be winding down or–in the case of the Paycheck Protection Program–over, but chances are, your business might still need aid.

Half of the country’s smallest businesses continue to struggle with the economic impacts of the pandemic, according to a June report by Yahoo Small Business. The survey also found that just 38 percent of microbusinesses–defined as those with fewer than five employees–received government support during the pandemic, with 85 percent saying they relied on community assistance to keep them afloat. 

If your company still needs financial support, consider tapping state and local small-business relief programs. Many of these programs were launched early in the pandemic, but they still have funds available. The American Rescue Plan Act, which President Biden signed into law on March 11, 2021, allocates $350 billion to states, localities, territories, and tribal governments to help eligible residents. Of that, $195.3 billion is going straight to the states.

According to the National League of Cities, an advocacy group for municipalities, the funds for local governments will remain available through December 31, 2026, but may only offset costs incurred by December 31, 2024. While states can elect to deploy the money in different ways, approximately 30 states, including Utah and Georgia, are using it to fuel small-business relief efforts, mostly in the form of loans or grants. Some states also offer to connect founders with resources or mentorship.

Wolf’s Ridge Brewing, a pub, and restaurant in Columbus, Ohio, was approved for a $10,000 grant through the state’s Bar and Restaurant Assistance Fund in November 2020 after the company was forced to lay off most of its 77-person staff. Co-founder Bob Szuter says the assistance program, which ended in January 2021, was not small change. “The total amount was not significant relative to the size of our business, but it certainly helped during a difficult period of 2020 when we did not know when and if there would be additional federal support,” says Szuter.

Different States, Different Rules

Every state and local program is unique–proffering different eligibility requirements, potential awards, and revenue-loss floors. Some programs require businesses to show certain revenue-loss thresholds or proof of having to close up shop. For example, businesses in Grand Junction, Colorado, can access up to $7,500 in grants but must demonstrate that the business was compelled to close or substantially limit operations because of the pandemic. New York awards grants based on an entity’s annual gross receipts for 2019, with a maximum of $50,000. Connecticut supplies one-time grants of $5,000 to businesses with fewer than 20 employees or a 2019 payroll of less than $1.5 million.

Other states offer both grant and low-interest loan programs–typically defined as loans with interest charges of less than 5 percent. Arizona’s Small Business Success Loan program offers loans of up to $75,000 with repayment terms ranging from six months to five years. Similarly, the Illinois Small Business Emergency Loan Fund provides businesses with fewer than 50 workers and less than $3 million in revenue low-interest loans of up to $50,000. At least 50 percent of a loan’s proceeds have to be applied toward payroll or other eligible compensation, including salaries, wages, tips, paid leave, and group health care benefits.

No Assurances

While these programs may still have plenty of funds available–some don’t even have an application deadline–you’d better act fast. Many programs are accepting applications on a rolling basis until the funds are gone. That’s why it’s best to get your applications in as soon as possible, says Tom Sullivan, vice president of small-business policy for the U.S. Chamber of Commerce, which has been following state programs throughout the pandemic. But track them, he says. While all 50 states are due some portion of the funding from the Rescue Plan, the timing of the disbursements may be different in each state.  

To wit, the timing of the second tranche of funding provided to states through the Rescue Plan is contingent on the local unemployment rate. According to the Treasury Department, states that have experienced a net increase in the unemployment rate of more than 2 percentage points from February 2020 to the latest available date of certification will receive their full allocation of remaining funds in a single payment on or around May 2022. Other states will receive funds in two separate, equal tranches.

With that, some states, counties, and cities may choose to establish new programs in the near future, says Sullivan. Governments have to apply through Treasury, and those applications are getting processed now, he says. He recommends first getting in touch with your local chamber or local economic development center, as these institutions may be paying close attention to the deployment of funds. 

Before you contact a local department or apply for assistance, it’s crucial to have your financial documents in order, notes Sullivan. This includes annual or quarterly profit-and-loss statements and tax documents. “Every city and county is generally a little different,” says Sullivan, “but the folks who get their stuff in first generally get preference.”

In 1997, a book was published that detailed the history of the United States and of the world in general and the book broke down events in history into four cycles.

The title of the book was The Fourth Turning.

The book was written by William Strauss and Neil Howe.

Neil Howe has been most interviewed since the best seller was released.

Howe broke down these cycles into “turnings” of history.

These turnings are broken down into approximately 20 year periods of time.

The first turning is described as a “High”.

Old Prophets die, Nomads enter elderhood, Heroes enter midlife, Artists enter young adulthood—and a new generation of Prophets is born. This is an era when institutions are strong and individualism is weak. Society is confident about where it wants to go collectively, even if those outside the majoritarian center feel stifled by the conformity.

The second turning is an “Awakening”.

Old Nomads die, Heroes enter elderhood, Artists enter midlife, Prophets enter young adulthood—and a new generation of child Nomads is born. This is an era when institutions are attacked in the name of personal and spiritual autonomy. Just when society is reaching its high tide of public progress, people suddenly tire of social discipline and want to recapture a sense of personal authenticity.

The third turning is classified as an “Unraveling”.

Old Heroes die, Artists enter elderhood, Prophets enter midlife, Nomads enter young adulthood—and a new generation of child Heroes is born. The mood of this era is in many ways the opposite of a High. Institutions are weak and distrusted, while individualism is strong and flourishing. 

The fourth turning is a “Crisis”.

Old Artists die, Prophets enter elderhood, Nomads enter midlife, Heroes enter young adulthood—and a new generation of child Artists is born. This is an era in which America’s institutional life is torn down and rebuilt from the ground up—always in response to a perceived threat to the nation’s very survival. Civic authority revives, cultural expression finds a community purpose, and people begin to locate themselves as members of a larger group. In every instance, Fourth Turnings have eventually become new “founding moments” in America’s history, refreshing and redefining the national identity.

According to Howe, 2008 began the fourth turning and says it may last until 2030.

If so, we are about halfway through the fourth turning.

Even Neil Howe didn’t foresee what was coming in 2020.

Pandemic, lockdowns, mask-wearing, toilet paper mania, riots, economic upheaval, chaotic election, vaccines and that was just in one year!

The year 2021 is getting off to a robust start with inflation rampant and hyperinflation knocking at the door of the world’s reserve currency, the U.S. dollar.

In February of 2021, Dr. Michael J. Burry of the “the Big Short” fame posted a tweet that went viral regarding inflation and hyperinflation of the U.S. dollar.

Burry warned that a rapid increase in the money supply, which has been going on under Trump for four years and now Biden, would lead to catastrophic consequences for the dollar.

Burry received a visit from the government shortly after that tweet.

The SEC showed up at his doorstep.

They weren’t there to question him about his involvement with GameStop.

Burry had a huge following on Twitter until he removed his profile last month.

I spoke with him briefly last week and via email and he told me that he will keep his thoughts to himself from here on out.

I got the impression that the Fed’s put the scare into him.

The year 2021 will be the year everything collapses from the U.S. stock and bond markets to the United States government, and all Western governments.

Everyone will be rushing into commodities and precious metals like gold and silver, and the rush into cryptocurrency, like Bitcoin, will continue.

The gold price and the price of silver have been manipulated by the Federal Reserve and Wallstreet banks like J.P. Morgan, for decades.

In the end, the Federal Reserve Bank loses control of everything.

Financial and economic events are not the only problems facing America and the world.

You are already seeing political upheaval in France, and the Middle East.

These will spread elsewhere and quickly.

France is mentioned prominently in prophecy.

Another issue that almost no one knows about and what NASA has been talking about is the Grand Super Cycle Solar Minimum that we have been in and are going deeper into.

Our planet has moved into what is known as a Maunder Minimum.

This could last until 2050 or beyond.

There will be an overall cooling of our planet which could result in a mini ice age.

The smartest man in the world and modern-day Nostradamus, Clif High, has been tracking and reporting about the solar minimum that we have entered, for years.

One of the biggest problems this solar minimum will have for humans is crop failures especially those living North of the equator.

You will eventually see a huge migration southward and for those living in the United States and worried about illegal immigration. One word: Don’t!

Those that have moved into the United States from Mexico will be trekking back to Mexico and you may even see some Yankee Americans following them.

Mexico will be sitting in a great position because of its proximity to the equator, its climate, and Mexico is also sitting on the largest silver reserves of any country.

Another problem with this solar minimum is weather patterns will change.

Right now you are seeing the lowest temperatures in the United States for the month of May, since the 1600s.

The up and down temperature swings will continue and you will also see an increase in seismic and volcanic activity.

Finally, one area that we have not covered is the Spiritual realm.

In a recent communique from the last of the living experts on the Fatima prophecies, Father Paul Leonard Kramer, said that the chastisements that are written about in the 3rd Secret of Fatima, which has never been disclosed to the world, and which only a few people have ever seen, have begun to unfold.

Kramer stated that the manufactured pandemic known as Covid 19 marked the beginning of the chastisements for the earth and the people living on earth.

Kramer is finishing his second volume to the book, “To Deceive the Elect”.

The prudent prepper needs to stock up on the following items if they expect to survive the second half of the Fourth Turning.

These items include :

  • Water
  • Food
  • Lead
  • Silver
  • Gold

As great as plain black coffee is sometimes our taste buds need a break from the norm, admit it having the same thing day in day out tends to get boring. An excellent way to spice up your favorite coffee beverage is by adding some extra flavor. Forget about those store brought sweeteners and creamers that are often packed full of garbage, what I’m talking about are natural flavorings.

Some of these flavored coffee combinations are strange, and others not so obvious, but trust me they will bring life back into your boring cup of Joe and you’ll wonder why you didn’t think of them before.

Below I have experimented with various ways to add extra flavor to your coffee, and I think these 12 are the best so far that will tickle ya taste buds and leave you coming back for more!

I have no doubt that after going through this list, you will be heading home in a flash to give at least one or two of these coffee combinations a try.

1. Cinnamon

Adding cinnamon to coffee isn’t anything new, but it’s one that’s stood the test of time and is a favorite with many coffee drinkers. But before you read on I have a twist on the already popular combination.

Instead of sprinkling cinnamon on top of your coffee or even stirring it into your brew, you’ll want to infuse the cinnamon with your coffee beans if you want to give your coffee a real cinnamon kick.

It’s not as hard as it sounds, simply grind whole sticks of cinnamon along with your whole coffee beans. If you don’t grind your beans fresh before each brew (why not?) you can instead sprinkle some cinnamon into your pre-ground coffee before you add water.

2. Cocoa Nibs

Cocoa Nibs.. say what? Isn’t that just chocolate? Not really. Cocoa Nibs are what chocolate is before it’s processed into the shaped bars we all know and love. The best way to take advantage of this natural coffee flavoring is to add a vanilla bean to your whole coffee beans just before you grind. If you can’t get your hands on fresh vanilla, you can use a few drops of extract directly into your cup of coffee or into your portafilter on your espresso machine before you pull a shot. Remember, though, a little goes a long way, any more than two drops and you’ll be pouring your brew down the drain.

4. Ginger

I’m not a fan of this coffee flavor, but for those of you that enjoy ginger tea, this coffee combination might be a winner!

Ginger can be overpowering if used in large quantities, so I recommend that you only add a few small slices to your grounds before you brew. The hot water will pass over the ginger and will infuse with your coffee. If you don’t have fresh ginger, you can supplement by using one or two tablespoons of ginger powder instead, but fresh is definitely better!

5. Cardamom

Cardamom is relatively unheard of in the west but is hugely popular in the Middle East. The taste of cardamom is very similar to ginger and comes packed with numerous health benefits. Fiber and other essential minerals are just some of the hidden gems of cardamom as well as aiding in circulation it goes great with coffee.

Either add whole cardamom seeds to your whole coffee beans before you grind or sprinkle a couple of pinches of pre-ground cardamom seeds to your freshly brewed cup of coffee.

6. Star Anise

This coffee flavor isn’t going to be everyone’s cup of tea, but it will definitely get you a few strange looks. Star Anise is known for a strong licorice taste with sweet, floral notes. For those of you that enjoy licorice, it makes a great coffee infusion when paired with dark roasted coffee.

Add your Star Anise into your whole coffee beans before grinding and brew as you normally would. However, if overused it can be very overpowering, I recommend using no more than 3/4 of a clove, or you’ll be pouring your freshly brewed coffee into the sink.

7. Nutmeg

If you want to bring out the earthiness in your morning coffee brew, I recommend trying a bit of Nutmeg. The added sweetness and earthy taste are truly unique and are a sure way to tickle ya taste buds.

The amount of Nutmeg to add to your cup of coffee is down to personal taste; however, I find that one shard is perfect for a typical cup. With that said experiment until you find the best infusion for your liking.

8. Lavender

I only thought that lavender was something found in body soaps, that was before I tried lavender ice cream as a child, yum!

Lavender is the perfect companion for many things, and coffee is no exception; I have found that it marriages best with the fruitier roasted coffees. You can either add a few sprinkles of lavender in with your ground coffee and infuse when you pour your hot water or add a few tiny drops of lavender oil to your brewed coffee. is brewed. Either way, this combination tastes great, especially on a lazy spring afternoon.

9. Clove

If you smoke cigarettes or have done in the past, this Clover-flavored coffee is going to be a winner! Many popular cigarette brands add clove into their tobacco mix to give an added sweetness.

When it comes to cloves and coffee use sparingly, because this spice can be very overpowering. Either grind with your whole coffee beans before you brew or add a couple of cloves to your pre-ground coffee and infuse when boiling water is poured over your grounds. If the taste is too strong, experiment until you find the best ratio for your taste buds.

10. Peppermint Oil

Nothing screams ‘tis the season more than a steamy cup of peppermint coffee. To successfully infuse your brewed coffee with this delicious holiday flavor it’s best to use pure peppermint oil which works really well with chocolatey dark roasted coffee beans.

To try this flavored coffee add a couple of drops to your coffee during the brewing process, however, use sparingly because peppermint oil in its concentrated form can quickly become overpowering no matter how rich your coffee beans are.

11. A Raw Egg

It might seem crazy, but adding a raw egg to your coffee tastes great! Hot coffee mixed with a raw egg delivers a one-of-a-kind flavor – trust me, you have to try it, at least once, It might not be a taste that everyone enjoys for everyone, but to be honest it’s not as disgusting as you might expect.

The addition of a raw egg gives the coffee a dense and slightly creamy body without masking the natural coffee flavors and aromas.

12. Butter

If you haven’t heard about Bulletproof Coffee (1), you must have been living in a cave. Many coffee lovers and health buffs have come accustomed to this coffee butter combination which has gained popularity in recent years.

This strange combination can be traced back to south-east Asia where strange coffee infusions are commonplace. Even though it’s hard to imagine butter which is normally only used in cooking, going so well with coffee, if done right it really is a marriage made in heaven (I said if done right!).

Just adding a teaspoon of organic butter to a sweet roast coffee will give your coffee a smooth, rich texture with a buttery depth that is truly unique.

Romeo Salta's Easter Salad

Romeo Salta was a renowned restauranteur back in the 1950s through the 1980s. His swank namesake Manhattan restaurant attracted luminaries from the worlds of business, politics, and entertainment.

My father, who was quite the buongustaio back in the day, used to take our family there from time to time when I was a kid. It was a thrill to rub shoulders with the rich and famous. But Romeo Salta was also my first introduction to Italian food other than Angelina’s Neapolitan cookery. Salta served what was at the time called “Northern Italian” food. That was the rather ludicrous catch-all phrase used at the time for any regional Italian cuisine besides the ones from Naples and points south brought to America by the mass immigration of the early 20th century. These cuisines from central and northern Italy were new and different and became very fashionable. So-called northern Italian food was considered “lighter”, and certainly more “sophisticated”, than the southern Italian cookery Americans were familiar with, although that wasn’t really the case.

In 1962, Romeo Salta wrote a cookbook for anyone who wanted to try recreating the dishes he served up at his restaurant. The book, called The Pleasures of Italian Cooking, didn’t have much of an impact on the way Americans actually cooked. For that, we would have to wait another 11 years, for Marcella Hazan’s landmark Classic Italian Cookbook, published in 1973. Still, Salta’s cookbook is a piece of culinary history, the first cookbook published in America to present “real” Italian cookery. (The first such book in the English language had probably been Elizabeth David’s Italian Food, published in the UK about eight years before Salta’s book.)

I recently inherited my mother’s copy of The Pleasures of Italian Cooking. What surprised me the most, given Romeo Salta’s glamorous reputation, was just how homey most of the recipes are. Antipasti like mozzarella in carrozza and fagioli e tonno. First courses like zuppa di scarola e fagiolignocchispaghetti aglio e oliocarbonarapolenta pasticciata, and risotto alla milanese. Second courses like saltimboccabollito mistopollo e peperonifrittata… In other words, everyday home cooking—and from all corners of Italy, not just the center and north.

I did find one recipe that appears to be Romeo’s own creation. Dubbed Insalata di Pasqua or Easter Salad, it’s lightly blanched green peas, garnished with ham, anchovies, and olives, and dressed with a citronette enriched with hard-boiled egg yolk. It sounded intriguing and certainly seasonal, so I gave it a go, playing with the recipe a bit to suit my own tastes.

I was well pleased with the results. Other than a Russian Salad, I’d never tried using green peas in a salad, and never with a simple oil-based dressing. It worked beautifully. The fresh taste of the peas was complemented by the savory ham and other garnishes. The salad was filling yet light. And it was rather pretty to look at, too. All in all, a fitting antipasto to begin Easter dinner.

So if you feel like a little bit of nostalgia this Easter, why not give Romeo Salta’s Easter Salad a try?

Ingredients

Serves 4-6

  • 1 lb (500 grams) frozen peas, blanched, drained, and cooled
  • 1/4 lb (150 grams) cooked ham, cut into cubes
  • One head of Boston lettuce

For the garnish:

  • A few anchovy fillets
  • Olives, green and black
  • 2 hard-boiled eggs, cut into wedges (optional)

For the dressing:

  • 1/2 cup (125 ml) olive oil
  • The juice of one lemon
  • Salt and pepper

Directions

Blanch the peas in boiling water. Just let the water come back to the boil and let it simmer for perhaps a minute, then drain in a large colander. Rinse the peas in cold water to stop the cooking, then let them drain until they are perfectly dry.

Line a salad bowl with the Boston lettuce leaves, using as many as you need to line your bowl.

In a separate mixing bowl, mix the drained peas and cubed ham together, then pile the mixture on top of the salad leaves.

Arrange the anchovy fillets, olives and, if using, wedges of hard-boiled egg on top of the peas and ham.

Whisk together the dressing ingredients until they are perfectly emulsified. Taste and adjust for seasoning, then pour over the salad.

Serve immediately.

Notes on Romeo Salta’s Easter Salad

Truth be told, as fascinating as it is as a piece of culinary history, The Pleasures of Italian Cooking is not always a pleasure to cook from. Salta’s instructions are fairly telegraphic, typical of many Italian cookbooks. But more to the point, a good number of his recipes, such as the one for peperoni alla piemontese, simply do not work. (Yes, I tried.) In others, the measurements seem off, such as his recipe for sedani alla parmigiana, which calls for braising three bunches of celery in a half-cup of stock. I wonder if he tested—or even proofread—his recipes?

Salta’s Original Recipe

This Easter Salad recipe also needed some interpretation. Here are his verbatim instructions:

Put peas on the bottom of a salad bowl. Arrange the anchovies and ham over them, then lettuce wedges around the edge of the bowl. Beat together the oil, [hard boiled] egg yolks, lemon juice, salt and pepper. Pour over ingredients in the bowl. Garnish with olives.

Good luck with that! If you followed these cryptic instructions to the letter you would wind up with something rather odd. So as you can see, I played around. For one thing, I used the lettuce as a bed rather than an edging. Salta doesn’t specify the type of lettuce, but given the period and his instruction to cut it into wedges, I’m guessing iceberg. I used whole leaves of Boston lettuce instead.

And then I mixed the ham, cut into cubes with the peas rather than laying slices of it on top. Rather than using a whole can of anchovies as Salta calls for, I used enough to make a cross on top, symbolic of Easter. And rather than adding hard-boiled egg yolks to the dressing, which struck me as probably unsightly, I used whole hard-boiled eggs—also an Easter tradition—cut into wedges, as part of the garnish.

Romeo Salta himself was born a southerner, in Puglia in 1904. After his father died when he was six, Salta was raised in a state-run orphanage in Florence. He had no formal culinary training, learning his trade working as a kitchen boy on several Italian cruise lines. Arriving penniless in New York in 1924, he made his living for a few years doing menial work at various hotels around town. After a stint in the midwest, he moved to Los Angeles in 1933, founding a restaurant called Chianti in 1938. After a low start, Ed Sullivan stopped for dinner one night and wrote about it in his newspaper column. Chianti soon began to attract celebrities like Lucille Ball and Errol Flynn. Salta’s career finally took off.

Returning to New York in 1951, Salta opened a place called Mercurio with a partner, then branched out on his own in 1953 with his storied namesake restaurant on West 56th Street. At a time when Italian restaurants were synonymous with red-checkered tablecloths with candles stuck in straw-covered Chianti bottles, his elegant ambiance and offerings of Italian food as it was and is cooked in its native land were a revelation.

A funny story…

A great part of the fun going to Romeo Salta was the chance to catch a glimpse of its rich and famous patrons. I remember, for instance, we once sat next to an elderly James Farley, who had been FDR’s campaign director, Postmaster General, and later head of Coca-Cola International. Since the tables were close together, he and Dad struck up a conversation, and we got to hear a few of his fascinating reminiscences.

But the most memorable moment from our visits to Romeo Salta was seeing Raymond Burr. He was an actor best known for playing Perry Mason in the eponymous 1960s TV series and later “Ironside”, a wheelchair-bound detective for the San Francisco police force, in the 1970s. We happened to be seated near the entrance to the restaurant. From our table, we could see the patrons coming in and out. Well, in saunters Mr. Burr. One of my sisters, who was a big fan of Ironside at the time, blurts out—well within earshot mind you—” Look, it’s Ironsides! It’s Ironsides!” We all squirmed in embarrassment, trying to look as nonchalant as possible. As soon as he was out of sight, I turned and replied: “Yeah, and it must be a miracle, ’cause he’s walking!”
